Good morning! Or more like midday haha! I am having coffee in a local cafe called Datel( translated woodpecker). It is so nice to have time and do whatever now! Such a chill summer I love it! Tonight we are going to see a movie and also there will be a BBQ I hope! Now I will enjoy the sun and have a bunch of coffee!
Ahoj! I have been spending a lot of time camera-free/ it is a bit strange but nice! A lot of time to relax and chill and do NOTHING! I am from a town on the South of the Czech Republic called Ceske Budejovice. 100.000 people, small and calm place. Perfect to spend a few weeks while relaxing and hanging out with friends. In the past few days I spent some time in the city, getting coffee- doing some shopping. Yesterday we went to Tad's summer house with some friends, we spent some time on the "beach" by a lake and then we had a BBQ and a small party! Today I came home and Tad's little siblings came to visit us, so we played ping-pong and did some carrot picking on the garden. It is quite normal for people to have vegetable gardens in the Czech Republic. My grandma, who lives right next to us has one with all types of veggies and fruits- tomatoes, peppers, cabbage, strawberries, blueberries... I mean I could keep going on haha! So we got some things from the garden and made a nice dinner. Really chill days! So nice! Oh and I started drinking a lot of cucumber mint water- it is so tasty and healthy! Tomorrow my grandma will teach me how to bake a typical Czech Easter cake and I am going to the dentist... I am not very excited about the later! Also I have been power walking a lot! Today I went out a bit later and the sky was so beautiful! Hope everyone is enjoying their summer!
Good morning! Today is an exciting day- I am going to Tad's grandpa for lunch and then we are having some friends over at Tad's summer house for a little BBQ and party. Yesterday I baked a cake- very simple, sponge cake with a creamy cover. I also picked small fruit from the garden to decorate it with. I really like this type of cake- it is very summery! Usually I prefer white cake in the summer and chocolate or a bit heavier in the winter. But then again, I don't really eat that much cake I only make it haha! I think this one turned out really nice! I put a layer of our raspberries between the two parts so it had a bit more interesting taste. But anyway here is the recipe:
- 225g flour
- 225g butter, at room temperature
- 225g sugar
- 4 eggs
-2 teaspoons baking powder
- 500g mascarpone
- 1 box of whip cream
- vanilla sugar
- berries to decorate
Preheat over to 180 degrees C. Take all the ingredients in a large bowl and mix it together with an electric whisk. You can also separate the egg whites and whisk them into merangue and then mix the rest in/ but it depends how you feel haha. It is possible to do both. Otherwise find a "sponge cake" recipe in your country, where you can see what ingredients are used there, since the flour and things are different everywhere.
Pour the mix into 2 non-stick 18cm tins. If you have larger tins, then add more batter. Just be sure to add more of everything! Then make the cake for 20-25 minutes until it is golden brown. I use a wooden stick ( really thin one- don't know the name in english) to check if the middle of the cake is fully baked. It is always a good idea to do that. After you take it out, set the cake aside and wait for it to cool off completely.
Whip the cream in a bowl and then add mascarpone and vanilla sugar. You can mix all of it together with an electric whisk to make sure the texture is nice and smooth. Then layer it on the cake- like I explained in the last recipe for chocolate cake HERE. Then decorate the top with berries and let cool in the fridge.
What a lovely day! The weather is finally nice and sunny- and warm! This morning I went to get a massage/ my back has been so sore since the bachelor thesis... I always get a massage when I am home, we have this amazing lady that does health massages that hurt like hell, but afterwards make you feel like in heaven haha. So I feel a lot better now! Afterwards I picked up my best friend Elizabeth and her boyfriend Jan and we went to get coffee and cake to this super cozy place called Siroko. I had two cappuccinos 🙈 serious caffeine shock haha. Afterwards we headed over to check out some glasses for Elizabeth. She went to the same place where I got mine and choose a really cute pair. Now I will go to my grandmas, who will teach me how to bake one cake and then I might go out for a bit into the city tonight! Hope everyone is enjoying their day! Love from Czech Republic!
Hola! It is really Nice to be home- i have been spending a lot of time with my family and friends. In the past days we have had a few BBQs - we actually started barbecuing a lot! Even just for having a lunch. Today I am having some problems with my computer, I can't connect it to the wifi, so I am just sharing pictures from my phone. I got a new pair of glasses- super nice, since I lost mine in Helsinki a few months ago. I need them for driving, especially in the dark, but I only have small strength on them so I decided I can live without them in Copenhagen. I went for glasses from Dolce & Gabanna - I used to have Rayban, but I didn't like the way they looked on me when I tried them on in the store. I am really happy about them! I also went to a wedding yesterday- it was so nice outside on a garden and the bride was stunning! Now I am reading Kinfolk (since I don't have wifi) and I think I will watch Harry Potter later haha!
